Try this link - it's for PCs but everything about the recording process -
excluding the actual programs - is the same as anyone needs:

For the Mac side of things CD Spin Doctor that comes with Toast works, but so
does Apple's Sountrack Pro (unfortunately not now available on its own) which
brings extras to the table.
At one of our MUG meetings we had a professional sound engineer and musician to
talk us through digitising music and he was very helpful. He said that to get
the sound into the Mac a good analogue to digital converter is needed. The one
in the Mac itself is OK if you want hissy sound, but if you can afford it its
better to invest in a seperate device. He added that for best performance, PCI
connections are best, followed by Firewire then USB1 and least useful USB2.

At our last meeting, during the Q & A, one of my PBMUG members asked, "I have
lots of old vinyl records taking up a lot of space in my home. I have a
pretty good turntable that I hardly ever use anymore. How can I use my Macintosh
(at a minimum cost) to convert these classic recordings into music CDs?"
