Jason,

I publish an application called Script Timer that will do what you want. Just go to the web site in my signature and click on Script Timer in the side bar for more details.

Unlike cron it's a regular Mac program with an easy to use interface. If you're running Tiger you don't have to make your workflow into an application. (In the next version of Script Timer, due out very soon, you won't have to do this in Leopard either.)
