Try using a mail filter in Apple Mail or Thunderbird.

My specific question is whether it is possible to do this in Automator. If you know whether it is or is not, I'd love to know.

I'm not going to switch mail clients for this task, and creating a mail filter doesn't help me. I need this to be a service because I need to quickly locate emails based on the sender email address. I need to lookup potentially dozens of different senders at a time, and the senders I need to look up change daily. So a mail filter won't help.
