Hi Bill
I have not seen anything directly in Automator, but you could run an applescript (from within automator if necessary)
Applescript dictionary for Quicktime player has this in
new screen recording v : Create a new screen recording document.
new screen recording
→ document : The new screen recording document.

Hi, Bill,
I'm running OS 10.7 and there's a Pause action which will wait for a given number of seconds, minutes, or hours before continuing the workflow. I'm guessing you can use the Ask for Text text action to get the workflow to prompt you for the wait time.
As for stopping, I'm not sure...
