I suggest using AppleScript for this job - because I can't find any Automator actions to do what you want to do.

There is a useful reference at http://www.macosxtips.co.uk/index_files/bulk-edit-address-book-contacts.php (scroll down to to see the example of editing the notes field).

There is an old reference page at http://www.mactech.com/articles/mactech/Vol.21/21.10/ScriptingAddressBook/index.html

You can still wrap it up an Automator workflow.
