Have you installed the SDK or just the public PR2 release? You must have the SDK to get the headers, docs and examples.
In the SDK, there is headerdoc located in the IOBluetooth.framework which is accessible directly from ProjectBuilder (expand the framework and you should see a documentation entry). On the filesystem, it is in /System/Library/Frameworks/IOBluetooth.framework/Resources/English.lproj/Documentation/Reference.
There's no real concepts or overview docs, but the headerdoc does contain fairly complete documentation of the API itself.
The examples are located in /Developer/Examples/Bluetooth.

Specifically, I'm trying to code some applications to get my phone book off my phone and into OS X and vice versa. So, I need examples on doing that type of transfer (or even just documentation).
