latency?

I'm considering to use Bluetooth to send sensor data to a Mac (PC too).
Being new to this I'd be curious to know what latency can be achieved at what data rates. I'm looking for less than 20ms (and stable!) latency with at least 200kbits/s. Is this possible ?

I made some simple experiments with serial adapters, but all my machines started to choke at 115kbaud. I think I'd prefer a synchronous connection (maybe using an audio profile ?). Does a suitable profile exist for this ?
