You have to use the Dial-up networking Bluetooth profile and AT commands
from the 3GPP/ETSI 27.005 specification. If your want to support a wide
range of mobile phone you will have to implement SMS PDU mode which is a bit
complex for a beginner. Start with a mobile phone which supports SMS text
mode.
