Hmm,
With all other Stacks I've worked so far (BlueZ on Linux and Widcomm
and Stollmann on Windows) special options had to be given when a link
should be encrypted.
Is this different with OS X ?

this is not really a question related to the MacOS Bluetooth
implementation, is it?
As far as I know / read the BT standard, there is always encryption at
the
link layer. When devices pair, they generate a initialization key and
a link key,
you will find decent descriptions with your favourite search engine.
