When a device has a serial port and this port is announced in the Service
Directory Protocol, the pairing process generates a serial port. These
ports look like (listed in "Terminal" by " ls /dev"):
cu.Bluetooth-Modem
cu.NM_NokiaN73_DIALUP-1
cu.Nokia3110c-COM1-1
You can check which ports are created for a device in "System Preferences >
Bluetooth" select the device, then "Advanced...".
For test purposes you can use "ZTerm" to communicate with a device using
these ports.
Now you can use standard IO functions to operate on the serial ports.
Alternatively you can use the Bluetooth Manager functions, there is a sample
app in the developer expamples:
