We had two presentations on BT LE at the WWDC this year. The sessions are called 'Core Bluetooth' and 'Advanced Core Bluetooth'. The latter has an intro to the BT LE technology so you might want to check that out.
Also, Robin has written a book about BT LE but it's not out yet.
