The Bluegiga dongle doesn't claim to implement any sort of standard HCI interface. Unless the simulator or OS X had specific code to support it (and the dongle was flashed with the right firmware and configuration), I wouldn't expect it to work.
I have also tried a CSR dongle, and it doesn't work with the simulator.
I have also searched for some specific recommendation of what dongles or chipsets are support, and haven't found anything definitive. That little bit of information might be helpful to have published somewhere.
