Scott,
HID is only partially supported. For example, a mouse won't work, but a keyboard will.
Those devices are managed directly by iOS, there's no way for you app to intercept
the traffic.
iOS 6 does not support HID over GATT. However, iOS 7 may do so (ask in the forums
for confirmation because we are not allowed to talk about iOS 7 on this list).
Regarding a general profile support: iOS 6 does not support any BT 4.0 profiles natively.
For iOS 7 => forums, again. sorry :-)
