My experience is also the same. It was a little embarrassing when I put together the first prototype of my device and wanted to show it to my customers in a web chat. I didn't understand why gadget that worked just a few minutes ago wasn't able to connect to the Mini I was using for chatting… Then the issue went away as soon as I stopped the WiFi streaming.
A partial solution seems to be that the 5GHz channels are used for WiFi. But I suppose this is not really possible in your case, just as for many others.
However, if you develop an rfcomm application, I suppose you are in the MFi program. I'd imagine you may have access to more info than we do. :)

The thing is that we get the data from a device via rfcomm over BT, and stimuli (it's a neurofeedback application), event triggers and others via wi-fi. Moreover, we can not tell the user 'Please, disconnect your wi-fi to use this software and device.' I don't think it's reasonable.
Is there any reference you can provide me about apple being aware of this? I can't imagine this being a known issue with apple hardware and apple not addressing it. Specially if the new macbook pros come without ethernet and all the internet connectivity they have is over wi-fi. What happens with those machines while they use apple's devices via BT like mice or keyboards?
It's hard to believe for me that there isn't a solution for such a big problem :-$
