So if it is listening on ch 37 and a connection is made using ch 38 or 39 you don't get to follow the connection and subsequent traffic. If you have source code for the peripheral and the stack allows it (like TI's does) you can insert a debug compile option so that advertising only occurs on Ch 37 by compiling in a call to set the advertising channel map.

The UI is fairly limited and it doesn't do a very good job of filtering or analyzing packets although the format of the data is public so you can write your own tools or find tools others have written to analyze the data further.
