Brad,
I can see why the differences in size at first do not make much sense.
The reason why there is this size difference between the different platforms is that they contain different Java VMs. We have something called "Optimize by Platform", which creates generally smaller installers that contain only what is needed for that platform.
The Mac OS X installer contains only the things needed for running an installer on Mac OS X, while the Unix one needs all the components needed to run on ALL Unix platforms. The main difference in size is due to the size of the VMs included by platform. On Mac OS X the Java VM is included in the OS, other platforms are not so lucky...
The "Includes Java VM" means that the installer is self-sufficient i.e. that the VM that the installer will run from, is included in the installer itself.
