Carbon can be used from Cocoa.

I have never used them, but supposedly there are nice QuickTime bindings for Java. Years ago at a WWDC, Apple said they were not going to provide Cocoa access to QuickTime because they were providing a java interface and the world only needs one OO interface to QuickTime. They claimed to be killing NeXTtime for that reason.
