Other than the comments in myDocument.m that you get with the
document-based template. In other words is there anything not obvious
that I'm giving up by starting with the straight template and adding the
extra controller and nib?

You need to specify the type(s) of documents that your app can open in the Applications Setting tab, down at the bottom.
