Resources for a Cocoa class (the academic variety)

I'm offering a Cocoa class this Spring (under an umbrella course,
Application Development using Frameworks; this time it's Mac OS X's
turn). I was wondering if anybody's taught a course like this, what
textbook they used, and if they had any helpful advice. I have a
pretty good idea as to what the answers will be, but I'm trying to
cover all bases.
Does Apple offer any support for people teaching Mac OS-specific
courses? I'm not talking financial, more moral :-)
