I'd recommend using NFS, because AFS is severely limited (slow, no filenames longer than 32 chars).

Maybe you should look into using Mac OS X Server. AFAIK (I've never used that product) it offers home directories on NFS-volumes, which would fit very well into your design (and would actually be easier to use and administrate).
