Hi,
I'm starting development of a vector drawing app in Cocoa/Quartz, and
would like to know what the 'preferred' file format for vector art is in
Mac OS X... like TIFFs are for bitmaps, and PICTs were under OS 9 and
earlier.

I'm thinking that PDF must be the way to go, but don't know how editable
that would make the resulting files (in terms of re-opening the files for
later editing). Clearly it would be great from a point of view of
document portability (i.e. everyone can open PDFs). Or would EPS be a
'better' solution?

Well, PDF is *portable*, but not particularly editable. Unfortunately, Mac OS doesn't have any intrinsic support for any of the common CAD formats. You might find SVG usable (basically, it's the postscript drawing model expressed in XML).
