As an English man living in the US I can say that developers will expect
color
wherever they are. For example, NSColor or kSkyBluePinkColor.
If it's a GUI issue then you should use "colour" in
en_GB.lproj/whatever.nib and "color"
in English.lproj/whatever.nib. You may decide to use en_US, but I'm quite
sure that
nobody in the US has set their locale up.

I've had the same dilema and made a locale for en_GB. The default for
English.lproj
is international English, not GB or US, but international. From what I've
seen, the
international spelling for colour is "color", in the American way. At the
same time,
some of the international spellings are in en_GB.
