I will not comment on Carbon and WO, since I don't work with them and since this is a Cocoa list...

The documentation Apple provides for Cocoa is a reference documentation that works just fine for that purpose. Still, your opinion is not uncommon from newcomers to the Cocoa camp - relax, give it some time, and I promise you that things will very soon start to make sense! Cocoa class- and method names are virtually self-documenting once you get accustomed.

Apple also provides a lot of example code, some you'll find on your local HD under /Developer/Examples, some on developer.apple.com - and it is available for Cocoa and ProjectBuilder once you learn what to look for... There is example code for virtually every class available from either Apple or one of the major third party Cocoa dev sites.
Apple provides a few tutorials, but if you're struggling to understand the basic concepts you should probably invest in one of the Cocoa books released over the last year, there are quite a few - look through the list archives for reviews and opinions about these. "Cocoa Programming for Mac OS X" is a good one you can order through Amazon.
