You should consider not doing this in your UI. You should leave the UI as is
and instruct your users to turn on "Switch to Black on White" in the
Universal Access preferences pane. It goes to inverted grayscale, but I
would bet that your UI could do without color to maintain the sensitivity of
the user's night vision :)
