(Somewhat OT) What is Image Capture doing?

I downloaded some images from my digital camera using Image Capture the other day and discovered that the Exif tags seem to be changed from previous downloads. Specifically:
1. The tags are now big endian 'MM'. They used to be little endian 'II'.
2. The Software Used tag now says "QuickTime 6.0.1". It used to have the camera vendor software used.
3. The Orientation tag seems to be duplicated.
4. There is no longer a thumbnail image in the file.

I guess that Image Capture is making these changes to a file when images are downloaded from a camera. I'm not sure, but this all probably changed in version 10.2 update of the System. I think there are other things that have been changed in these image files, but I'm not concerned about them. I don't like the item 4 change because I used the thumbnail in my app. Since I now have to scale the main image to a thumbnail, my app is annoyingly slower.
I guess the bigger point is, why is Image Capture doing this? It seems to me that the original camera file should be left unchanged when it is downloaded. It least there should be an option to not modify the file. I may be missing something, but I don't see any such preference in Image Capture for this.
