Yeah, compressing the image again does degrade the image, no matter
what quality is used. I assume that Image Capture does nothing to the
image data if "Embed ColorSync profile" is unchecked. I think this
would be the case since the File date and time are unchanged.
"Embed ColorSync profile" would not imply to me that the image data is
recompressed. I would have thought that the profile data is added but
the image data is left alone.

I've been rather annoyed by this behavior as well, especially since it

recompresses the jpeg file using a lower quality setting than the
camera.
It's been doing that in every version of OS X that I've used.
