How come, after more than 13 years, there still isn't a palette on
Interface Builder that lets me have a calendar?

Sounds like you're missing a calendar view.

Sorry, I couldn't resist. :-> Seriously, I think the reason has something to do with such a view being on the "high-level" side even for Cocoa, and something to do with limited resources within Apple. The fact that there is also a working Calendar view in OmniAppKit might dissuade Apple from reinventing the wheel, too...
