Check out the article on cocoadevcentral:
http://www.cocoadevcentral.com/tutorials/showpage.php?show=00000007.php
It shows you how to make bigger tooltip fields in IB.
Also, I think that the command sequence to go to the next line is
option-return.

I know Apple prefers that help tags be short and simple, but I have a
need to display help tags that have multiple lines of information. I
know it can be done, I've seen it in various Cocoa apps, but I can't
find any docs on how to do it. Is there a special escape character or
something?
P.S. I'm using IB to set the help tags for my interface objects.
I "compose" my tooltips in TextEdit, copy them onto the pasteboard,
go to IB, and paste them into the inspector's textfield. If there's a
better way to do this, I'm not aware of it. That little textfield on
the inspector could sure stand being bigger, too -- I find I'm
constantly resizing my inspector to be able to see my tooltips (at
least the first line of them :->), and then making it smaller again so
it doesn't take up so much of my screen...
Hmm, sounds like a bug worth logging...
