There is also an option set for this, in the info.plist, in the SimpleService example.

How would I go about creating a faceless application? No icon in the dock,
no windows? I would have done it as an extension in Classic, but how would
I go about it in OS X? If anyone knows where I can find documentation about
this (or, even better, example code), please, let me know.

look at the DNSUpdate's code at <http://www.dnsupdate.org>.
You will find the code for a daemon, a startup-item (launched at boottime) and the code for the gui which installs the daemon and the startup-item.
