Mac programming jobs are not necessarily more difficult to obtain (and retain) if you know the market you are going after. Apple excels in certain domains, such as multimedia authoring, digital video, and digital audio. As a generalist programmer you are definitley better of working on PC's because the market is so huge. However if you excel in something like audio, you have a large market value. I myself specialize in audio programming (on multiple platforms), and I have no trouble finding positions. Just make sure you are not kidding yourself when you say that you are a specialist.
Of course it is always a benefit to know how to develop on multiple platforms.
