Launching apps from menu items (editing .xib files)

I am interested in inserting a menu item into a .xib file in order to
launch an application, and I was wondering if this is possible-- it
appears that many menu items are actually handled by <ostype command..
entries, and these appear to be Apple Events.

Any advice on how to accomplish this/avoid doing it the dumb way/etc. are
much appreciated as I have found next to nothing on the subject and I am
very new to XML editing.
