I had the same need recently. I could have sworn I'd seen a thread about it, but I couldn't find it on Mamasam. Anyway, here's what I did.

In IB, select the menu item, and double-click on the area on the right end of the menu item where the key equivalent should be displayed. It becomes highlighted with a rectangle. Press Command-arrow and you get what you need. It might take a couple of tries. I found IB sometimes interprets my Command-arrow as "move the selection in IB."

If you can't get this to work, you can also copy-and-paste from the nib file of another application (I used OmniWeb). Select the menu item, go to the Inspector, and copy that funny character in the Attributes pane for the menu item. That's what I did for my left and right arrows, but I've since found that it is possible to type those in directly.
