There are no, or few, public patterns in Apple's API AFAIK. The striped window background color is probably a pattern color. The "metal" texture on selected applications from Apple are most likely a pattern color (at least in the Cocoa apps), et.c.
But to answer your qestion, I think you need to provide your own images.
