Another option could be to use AppleScript, if your not that concerned
about speed. There is at least one AppleScript Studio example app that
goes mining through Mail's database.

"mail" is capable of handling one mailbox only, Mail.app handles
several. If you redirect "mail" to the right mbox file, there should be
no problem. Mail.app's mbox files are inside $HOME/Library/Mail/ .

Probably not too much as mbox files are quite easy to parse: each mail
begins with "From " after an empty line. Then drop each line beginning
with one word and ":".
Well, I'm not sure wether this works in 100.00% of all cases, so please
look up the appropriate RFC.
