Please *DON'T*. I've never seen any purpose of FTP ASCII-transfer other than wasting bandwidth (because you have to re-down/upload the file in binary afterwards). All text editors on Mac OS X are able to handle all common line endings (mostly because there are already two different ones used on Mac OS X, \r and \n).

PS: -[NSWorkspace getInfoForFile:application:type:] might help you a bit with the other problems.
