NEWBIE: Easier way to do strings?

Hello,
I'm pretty much brand new to Objective-C, and was
wondering if there's an easier way to work with
strings. Most of my software deals *heavily* with
string processing, and working with unicode character
arrays (NSString and NSMutableString) seems awfully
unwieldy.
I seem to recall a string data type. Are there any
routines for working with these? (extracting
substrings, search and replace, etc.?) If not, how
would I go about writing my own?
And finally, could anyone point me towards a really
good beginner's reference (online) to learning the
Objective-C language? Most of the documents I've found
consist of 20 chapters, each one assuming you've
already read the other 19. =)
Like I said, I'm new to this, and not quite
comfortable for OOP yet, so I really appreciate all
your patience.
