I don't think Apple ever gave an official explanation but it seemed
pretty obvious at the time.
When they started the project to convert NextStep/OpenStep into the new
Mac OS, it was just referred to as Rhapsody, but when they introduced
the Carbon interface, they had to have a separate name for the Rhapsody
interface to distinguish the interfaces (Rhapsody was never going to be
the official name anyway).
Well, Apple was making a big deal of the fact that there would be Java
interface for Rhapsody; they clearly thought it would help them market
Rhapsody if they could emphasize the connection to Java. Well, there
appears to be some sort of federal law that any product related to Java
has to have some cute caffenated or at least food/drink related name.
So....Java....Cocoa....get it?
