New AppleScript documentation from Apple sometimes appears online first,
but is then also distributed on the Developer Tools CDs.
So if you have the December 2001 tools installed, you can choose
Developer Help Center from Project Builder's Help menu. Then click Core
Technologies. On that page, you will find an AppleScript topic heading
with links to several AppleScript docs, including the AppleScript
Language Guide. (The Language Guide has some overview, but is more of a
reference than an introductory text.)

As others have noted, there are good third party introductory books on
AppleScript and third-party websites as well. A Google search on
"AppleScript" turns up several of them.
