Vim is my preferred all-around console-based editor. It comes with syntax coloring in all sorts of languages, including Objective-C. You can also design your own syntax definitions.

You can get a precompiled binary of vim at <http://www.entropy.ch/software/macosx/>. This is version 6.0, but I notice from www.vim.org that the latest is 6.1, so if you want you can try building that from source.
