There are plenty of books on Unix, but I know of two which specifically
cover Unix and Mac OS X:
"Learning Unix for Mac OS X" by Taylor and Peek (from O'Reilly), which
comes out this month
and
"Mac OS X Unleashed" by Ray and Ray
Mac OS X Unleashed is big and covers lots of topics, while the O'Reilly
book might be more focused on what you want (but I haven't seen it).
