Adding and deleting menus

I'm having a lot of trouble getting started (ordered books etc but they're not here yet).
Can anyone help with a simple example (or hints as to what I should try next).
I'm trying to modify the example "MenuMadness" to add and subtract menus.
Not having any luck trying to remove menus.
