I'd recommend getting O'Reilly "Building Cocoa Applications" - the worked examples are pretty darn good and the Sams Cocoa Programming, because very quickly you're going to need a reference guide.

And then get your hands dirty - work through the examples and then try a real application of your own.

I'd also get a copy of The C Programming language, second edition Kernighan and Ritchie. If you've not done C before, and C is a valid subset of Objective-C, then you'll find that guide very useful indeed.

Also, learn to find your way around the online Apple cocoa documentation.
