Garfinkel and Mahoney's _Building Cocoa Applications_

to doing exactly what you're looking for. It covers controls, event loops,
autorelease pools, etc. I haven't read their Cocoa version of the book, but I
did read their 1993 version for NeXTstep and found it very useful.
