Check out MRJAppBuilder in /Developer/Applications. It will make a .app wrapper for your .jar file, and allows you to set the classpath and a variety of other runtime parameters. It also lets you bunde text, jar, and other files in your app, and a bunch of other neat stuff.

The end result is a Java/Swing app that's much friendlier.
