Invalidating menu items

I want my application to only open one document at a time. I have learned how to use ValidateMenuItem in an instantiated NSApplication delegate to dim the New and Open menu items. But how can I invalidate the files listed in the Recent Items submenu -- or if worst comes to worst the entire Recent Items ?
