Apple still has the EOF 4.5 documentation online in PDF form with the legacy WebObjects 4.5 documentation here:

Within that, the EOF 4.5 Developer's Guide has a lot of good introductory material on how to use EOF. (Note that the site above includes both Java and Objective-C documentation.)

If you're looking for sort orderings and qualifiers, my Open Source BDControl framework has them.

If you read some of the EOF 4.5 documentation and you like what you see, please file a bug in RADAR <http://bugreport.apple.com/> and let Apple know that you'd like to use EOF with Cocoa on Mac OS X and what you'd like to use it for (with as much business detail as possible). This will help make a business case to Apple management to bring it back.
