I'm conflicted.
I like the look of the metal windows (though I wouldn't like every
window to look that way), but
I worry that the once wholly consistent mac interface is now divided
into two.
Once a style is available, it isn't realistic to believe it will only
be applied to "real world device" apps...
and single window apps.
So we're already on the slippery slope to different apps looking and
feeling different on the same
system :(
I admit I was really surprised to see Apple go down this route.

You're right, it's even less consistent than if they were all metal.
Problem is as a user, the metal look is pretty imposing and as I said
above, I even like it for the odd
window, but if all the panels, sheets, dialogues started displaying in
metal, it would be WAY too much
for me.
I think the way to go about it is to develop according to current UI
guidelines (metal for main window only)
and then talk to apple to make your views known. Perhaps they'll change
the guidelines.
