Why not PostgreSQL ?
It is an open source separate appl (which in fact does not include every
thing in your compiled appl).

The problem ist that I won't that the user of my application (application for privat persons) has to start an other application what a server is. At the moment I have this application made with RB and Valentina, but I want to move this to Cocoa and I look in this circumstances for a solution in Object-C.
When I understand it correct then I need a serverprocess for PostgreSQL?

Sure, but it's trivial to start and stop it under your app's control with NSTask.
