That was my first thought, as well - but then I tried it. It cleanly unmounted active filesystems, but none of the GUI apps that were running were shut down nicely. Mail.app had to spend a couple of minutes re-indexing all of my mailboxes when the system came back up.

In short, it worked, but it obviously isn't what Apple's installer or updater utilities use.
