Launching other (GUI) applications

I've searched the archives but didn't come up with an answer. I'm looking for a way to launch other OS X applications from a Cocoa application. I've read about NSTask and NSPipe, but so far everything seems to be related to executing terminal commands.
Thanks in advance for any advice!
